Roasted Peppers Italian Style

red, yellow or green bell peppers |
| 1 tablespoon |
olive oil |
| 1 |
lemon, juiced |
| 1 teaspoon |
fresh garlic, chopped |
| salt |

| 1 paper grocery bag |
|
Roast the bell peppers over an open flame until black.
Place peppers in the paper bag to sweat for 10-15 minutes. Remove from bag and peel off the black skin. Cut off stem and remove seeds.
In a medium bowl, blend the olive oil, lemon juice, and garlic. Cut peppers into strips 1 inch wide, add to the bowl and marinate for 15 minutes.
